Fish and Seafood Freezing

Maintaining freshness, texture and integrity throughout manufacture/production is crucial with fish and seafood, especially during the freezing process.

Cryogenic Freezing explained…

Using CO2 in its liquid or dry ice form within the Cryogenic Freezing (CF) process reduces large crystal count within products – normally formed during mechanical cooling – by freezing quickly and efficiently.

The result is that the product tastes better and retains a better texture due to better-preserving cell walls within the products. Using CO2 within this process can save space, quality and bio-count within fish and seafood within your business and ensure that the products do not develop odours.

Advantages of CO2 in Cryogenic Freezing:

  • More cost-effective than other methods
  • Preservation of cell walls of products
  • Better quality products – i.e. texture, freshness, smell
  • Lower risk of bacterial growth
  • Low maintenance costs
  • Space-saving
