Using CO2 in its liquid or dry ice form in the Cryogenic Freezing (CF) reduces large crystal count within products – normally formed during mechanical cooling – by freezing quickly and efficiently. The result is that the product tastes better and retains a better texture due to better preserving cell walls within the products.
